The first time we tried elderflower cordial was two years ago when we walked to the water falls of Skakavac not far from Sarajevo. After the long walk we sat in an improvised road-side café where we were served this cold drink with an exotic taste.
Recently a friend of ours made it and it reminded us of that day. Here is the recipe if you want to try it!
Elderflower cordial recipe
Ingredients:
- 1.5 litres of boiling water
- 1 kilo of white granulated sugar
- 20 large elderflower heads (if they are small, pick more)
- 55g of citric acid (in pharmacies or in ready-made mix for jams)
In a deep saucepan pour the boiling water onto the sugar and stir. Leave to cool, stirring every now and then to dissolve the sugar.When cool add the citric acid, the lemons (zested and sliced) and the elderflower heads. Leave to steep for 48 hours.Strain twice through sterilised muslin Using a jug and funnel carefully pour into hot sterilised bottles
- 20 belles ombelles de sureau noir
- 1,5 litre d'eau bouillante
- 1 kg de sucre
- 55 gr d'acide citrique (en vente en pharmacie ou dans les mélanges pour confitures)
Dans un grand plat creux verser l'eau bouillante sur le sucre et laisser refroidir en mélangeant régulièrement pour dissoudre le sucre. Quand le mélange est froid, ajouter l'acide citrique et les fleurs de sureau. Laisser infuser 24 heures. Filter et verser dans des bouteilles stériles.
